Trang Bang banh trang (dew-soaked rice paper) is a famous traditional food of Trang Bang town in the southern province of Tay Ninh. Made of rice flour (which can be mixed with cassava flour), the round/rectangular and milky white rice paper is made through a meticulous and complicated process before being dried in the sun, then baked and exposed to the dew overnight to become a bit gummy and slightly salty with its surface featuring hundreds of tiny bubbles. Banh trang can be eaten directly without dipping in water or baking until crispy, being teared into pieces and mixed with beef jerky, dried shrimp, mango with sauce. Or it can be used to roll with grilled fish, boiled pork or veal, and raw vegetables. VNA Photo: Hồng Đạt
